Sorry this is time lagged, but just read "Kitchen Confidential" by Anthony Bourdain, an account of his time in various kitchens.Haven't yet read any of his fiction, but can see that he would have a wealth of experiences to use, this is not cooking as we know it from any of those wussies on tv.
